| Hops: Warrior, Strisselspalt | Grains: Cherrywood Smoked Malt, Weyermann Smoked Malt, Munich, Dark Crytal, Crystal 60, Biscuit, CaraHell, CaraPils, Chocolate |
| Yeast: WY1338 European Ale | Extracts: Light LME, Corn Sugar |
Aroma: Distinct smoky smell, pleasant intensity, with yeasty hints. Smells like tepee leather. No hops noticable. 8/12pts Appearance: Pours with rich, thick head. Deep colour reminiscent of mahogany-tanned leather. 3/3pts Flavor: Initial flavor is extremely rich hickory/cherrywood smoked flavor, a bit overpowering at first - definitely fatigues the palate initially, but only for the first 5-6 seconds. After the initial burst of flavor, the intensity mellows out very quickly over the next 1-3 seconds, leaving a faint lingering smokiness, like the aftertaste from a taste of dry-smoked brisket. Despite the inital intensity of the flavor, the aftertaste really leaves your tongue craving another. Hints of every kind of delicious grilled and smoked dish imaginable! Solid rich maltiness in the backbone. Hops/bitterness are not tastably present, nor are any yeasty esters or phenols. 18/20pts Mouthfeel: Wonderful thickness/density with slightly oily slickness. Carbonation bubbles popping on tongue, but not distracting - best at cask temps. 4/5pts Overall: Exactly what I was hoping for! A richly smoky ale to complement grilled foods, not overpowering or palate-wiping, no lingering "smoky burp" later on, and no distractions from style-borne traits (i.e. it doesn't taste like a porter, or a stout, etc.), allowing the smoke to showccase. I wouldn't change a thing! (Well, serving on a nitro-tap might be interesting...) 9/10pts Total "BJCP" point by my own tasting: 42pts (at the middle of the "Excellent" rating).
Entered into competition at 2011 New England Homebrewers Jamboree. Unfortunately discovered after the fact that it is not a BJCP competition and they don't give judging notes, scores, or judging sheets back to entrants.

| Hops: Willamette, Fuggle | Grains: CaraPils, Crystal 15, Biscuit, Aromatic, Rye |
| Yeast: WLP004 Irish Ale | Extracts: Light LME, Honey |
Aroma: Extremely light nose, mostly yeasty with a little malt - no hops noticable. 5/12pts Appearance: Poured with a beautiful head that falls rapidly. Could potentially use something more to increase head retention. GORGEOUS deep straw-gold color. Lack of head retention is the only reason I don't give this a 3. 2/3pts Flavor: Tastes very much of an Irish ale, flavor is much bolder than aroma. Lighter malts take the stage in initial taste, broadening to some spiciness from the rye, with a little breadiness/toastiness. Aftertaste is full of bready/toasty malts and notes of the honey at the back of the mouth and throat, while rye spice lingers on the tongue. Gives an extremely tasty after-burp flavor. 17/20pts Mouthfeel: Light carbonation tingle on the lips and in the throat. Very nice body, rolls across the tongue in a very satisfying way.. Perhaps a little higher carbonation level would help the mouthfeel, but I'm not sure it would be in keeping with the style. 4/5pts Overall: A very satisfying beer. A small amount of lacto fermentation added a nice crisp hint of sourness, which offsets the rye spiciness nicely. A bit strong on the breadiness and a bit short on head retention. Perhaps the next batch should eliminate the Biscuit Malt and up the amount of CaraPils (or maybe some CaraFoam). The honey plays in nicely, but is not directly noticable - replace with sugars or increase the amount to showcase the flavor (not so much an Irish Blonde then, though) More rye and going all-grain to eliminate the LME would help the aroma considerably (but don't want to raise the rye percentage too much). The hops are really almost not noticable in flavor or aroma (bitterness is perfectly refreshing), need to add more aroma hops next time. 7/10pts Total "BJCP" point by my own tasting: 35pts (at the top end of the "Very Good" rating).
